A whipped feta dip with a fig jam and pomegranate molasses swirl instead of the usual hot honey — five minutes of prep, and it holds up if you make it a day ahead.
1teaspoonfresh thyme leaves, plus a sprig or two for garnish
pomegranate arils or fresh quartered fig, optional
For Serving:
Warm pita, crostini, crackers, fresh vegetables
Instructions
Combine feta, Greek yogurt, olive oil, garlic, lemon juice, and zest in a food processor. Blend until completely smooth and fluffy (about 2 to 3 minutes), scraping down the sides once or twice. Taste and adjust salt and pepper.
Combine the fig jam, 1/2 tablespoon of pomegranate molasses (taste & add more, if you like), and red pepper flakes in a small microwave-safe bowl. Warm in the microwave for 20-30 seconds. Stir to make sure it is well combined and loose enough to drizzle.
Spread the whipped feta onto a shallow plate or wide bowl, using the back of a spoon to create peaks and valleys.
Drizzle the warm fig-pomegranate mixture over the whipped feta.
Garnish with the chopped pistachios, and fresh thyme leaves. If using, add some pomegranate arils or quartered fresh fig.
Serve immediately with warm pita, crostini, crackers or fresh veggies.

Make ahead: Store the whipped base (unswirled, ungarnished) in an airtight container in the fridge up to 1 day ahead. Stir before spreading, then add the swirl and garnish fresh.
No pomegranate molasses on hand? A balsamic glaze is the quickest swap. For something closer to the real thing, simmer 1 cup pomegranate juice with 1 tbsp honey until reduced by half and syrupy.
