Coffee Donuts

  • 2 cups all-purpose flour
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • 2 tablespoons instant espresso powder
  • 1 cup milk, room temperature
  • 1 large egg, room temperature
  • tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

Salted Caramel Coffee Glaze

  • 2 tablespoons salted caramel sauce, plus more for drizzling (store-bought or homemade)
  • ½ teaspoon instant espresso powder
  • cups powdered sugar
  • 2 tablespoons milk

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a donut pan with cooking spray or melted butter. Set aside.
  • In a large mixing bowl, whisk together the flour, brown sugar, baking powder, kosher salt, and instant espresso powder until well combined.
  • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the bowl with the dry ingredients. Gently fold and stir until just combined. Do not overmix; a few lumps are okay.
  • Transfer the batter to a piping bag or a large ziplock bag with a corner cut off. Pipe the batter evenly into the prepared donut pan, filling each cavity about 2/3 full.
  • Place the donut pan in the preheated oven and bake for 9-11 minutes, or until a toothpick inserted into a donut comes out clean. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • In a small bowl, whisk together the salted caramel sauce and espresso powder. Add the powdered sugar and 2 tablespoons of milk; stir until the sugar is incorporated and smooth. Adjust the consistency by adding more milk (1 teaspoon at a time), or more powdered sugar (1 tablespoon at a time) until it's right for dipping.
  • Once the donuts are completely cooled, dip the top of each donut into the coffee glaze, allowing any excess glaze to drip off. Place the glazed donuts back on the wire rack. Drizzle additional caramel sauce over each donut in a zig zag pattern. Allow to set up.

Notes

Storage Tip – These donuts really are best when fresh! If you plan to save some for later, only glaze what you will enjoy right away. Store the remaining glaze and donuts in separate containers. Stir the glaze before using.
