Cheesy Cranberry Turkey Sliders Recipe on Hawaiian Rolls

This turkey sliders recipe is a fun way to use up turkey leftovers. They're bursting with bright cranberries, gooey cheese and flavorful brown butter. It's so hard to eat just one!

Ingredients

Garlic + Herb Brown Butter

  • 3 tablespoon unsalted butter, room temperature
  • ½ teaspoon poultry seasoning
  • ¼ teaspoon garlic powder

Sliders

  • 12 Hawaiian rolls, slice in half horizontally
  • 8 ounce white cheddar, shredded off the block
  • 12 ounce turkey breast meat, deli slices or leftover Thanksgiving turkey sliced thin
  • ½ cup cranberry sauce, or sauce/jam of your choice

Instructions

  • Preheat oven to 375°F. Spritz the bottom and sides of a 9x13-inch baking pan with cooking spray then line it with a sheet of parchment so it hangs over the sides (so you can lift the sandwiches out after baking).
  • Melt the butter in a small, heavy bottomed saucepan over medium heat. Stir frequently, until the butter smells nutty and you begin to see golden brown bits forming in the bottom of the pan. Whisk in the poultry seasoning and garlic powder. Transfer to a bowl and set aside to cool.
  • Place the bottom slab of rolls in the prepared pan. Sprinkle on half the cheese, then add a layer of turkey. Dollop spoonfuls of cranberry sauce over the meat, then sprinkle on the rest of the cheese. Add the top slab of rolls. Brush the brown butter over the top.
  • Tent with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes

Notes

  • Make ahead option – assemble, cover and refrigerate overnight. Set sliders on the counter while you make brown butter & preheat the oven. Brush the tops with the brown butter just before baking. Add a few minutes to the bake time (while they're covered with foil) to ensure they get hot and melty in the middle.
  • Storing – transfer to an airtight container and refrigerate. Enjoy within 3 days. 
  • Reheating – Wrap in foil and reheat in a 350°F oven until hot in the center, or microwave a couple sliders at a time for 60 to 90 seconds. 
  • Assembly tip – To make it easier to pull apart, separate the bread rolls from one another and reassemble them snugly together in the pan. It can be helpful to add a toothpick to the end sliders so the tops stay put as the cheese melts. Remove after baking.
  • Brown butter tip – Keep an eye on the butter as it browns. Stir often to prevent the milk solids from burning. You're looking for golden brown bits.
