Make Your Own Flavor Kettle Chips

These make-your-own-flavor kettle potato chips require no deep frying and no mess! Store-bought chips spend a few minutes in the oven, then are tossed in a blend of herbs + spices to kick up plain old chips! (Inspired by Rebekah Peppler's 'Upgraded Potato Chips' from À Table.)

Ingredients

  • 8 ounce store-bought plain kettle potato chips, 8 oz of chips for each seasoning blend

Brown Sugar BBQ Blend

  • 1 teaspoon brown sugar
  • ¾ teaspoon smoked paprika
  • ¼ teaspoon dry mustard
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • teaspoon turmeric
  • teaspoon black pepper
  • pinch fine sea salt or kosher salt, or more, to taste

Lemon + Herb Blend*

  • zest of ½ a lemon
  • 1 teaspoon dried buttermilk
  • ¼ teaspoon dried chives
  • ¼ teaspoon dried tarragon
  • ½ teaspoon dried basil
  • teaspoon garlic powder
  • pinch white pepper
  • pinch fine sea salt or kosher salt, or more, to taste

Rosemary + Parmesan Blend

  • 2 teaspoon parmesan cheese, grated
  • 1 teaspoon fresh rosemary, minced
  • ¼ teaspoon onion powder
  • teaspoon garlic powder
  • pinch fine sea salt or kosher salt, or more, to taste

Sweet + Spicy Thai Blend*

  • zest of ½ lime
  • ½ teaspoon ground ginger
  • ½ teaspoon sugar
  • ¼ teaspoon cumin
  • ¼ teaspoon ground coriander
  • ¼ teaspoon dried basil, or dried thai basil
  • ¼ teaspoon crushed red pepper flakes
  • teaspoon cayenne pepper
  • teaspoon garlic powder
  • teaspoon onion powder
  • pinch fine sea salt or kosher salt, or more, to taste

Instructions

  • Preheat oven to 300°F.
  • Mix the seasoning blend of your choice.
  • Spread chips across a sheet pan and bake for 5 minutes.
  • Immediately sprinkle the seasoning blend over the chips and toss to coat.

Notes

*If you have a spice grinder, you may pulse the blends for Lemon + Herb and Sweet + Spicy Thai.
Each blend is enough to season 8 oz (or one 8-8.5 oz bag) of kettle chips.
Each blend calls for just a pinch of salt, plus more to taste. Start with just a pinch in the blend, season the chips, then taste a chip to determine if they need more salt.
