 INGREDIENTS

Saute shallots, mushrooms + garlic.

Add the spinach to wilt.

Whisk egg whites with salt, pepper + nutmeg.

3.

Spoon mushroom mixture into prepared muffin tin.

4.

Distribute the egg whites and top with shredded swiss. Bake until set.
