These Cranberry White Chocolate Cookie Bars are the easiest because they start with store bought sugar cookie mix. Add just five more ingredients for a simple treat that’s perfect during the holiday season!
Heat oven to 350°F. Line a 13 x 9 inch pan with parchment (trimmed as needed). Lightly spray exposed sections of the pan with cooking spray.
Combine the cookie mix, butter and egg in a bowl until it turns into a soft dough. Fold in half the white chocolate chips and all the cranberries. (Fold in optional mix-ins now, also.)
Press the dough into the prepared pan and bake for 20 to 22 minutes. Allow to cool in the pan for at least 10 minutes, then carefully lift the pan cookie out and transfer to a cooling rack.
Melt the remaining white chocolate chips: place in a heat proof bowl and microwave at 50% power for 1 minute, stir. Heat again in 10 second intervals, as needed. Drizzle the melted chocolate over the pan cookie. Allow to harden for about 20 minutes.
Cut into 1 x 2 in rectangles and arrange on a serving tray.

Optional: mix in 1/4 cup chopped nuts, or replace half or all of the white chocolate chips with chopped nuts.Drizzle variation: instead of melted white chocolate, drizzle with a simple powdered sugar icing (1 cup of powdered sugar, 1/2 tsp of vanilla extract, 1 to 2 tbsp of milk or orange juice).
