Spaghettini with Roasted Cauliflower + Pancetta is the epitome of simple ingredients coming together to create an incredibly satisfying pasta dish full of flavor, textures, and comfort!

Combine veggies with olive oil, thyme, salt + pepper on a sheet pan to roast.
Crisp the pancetta. Use some of the rendered fat to toast breadcrumbs + pine nuts.
Cook the pasta. Reserve 1 cup of pasta water + stir in vegetable bouillon.
Warm olive oil with garlic + crushed red pepper. Toss in parsley. Add pasta, veggies, pancetta, parm + reserved water and toss.
Top with toasted breadcrumbs + pine nuts and enjoy!
