Rotisserie Chicken Pho in the Instant Pot is a shortcut method to enjoy this beloved Vietnamese-style soup at home! Enjoy with fresh vegetable garnishes for a delicious meal.

Discard the chicken skin. Shred light + dark meat; set aside. Reserve bones for the broth.

Char the onion + ginger using the Sauté function, then add the spices to toast.

Add remaining broth ingredients to the pot. Lock the lid. Set the manual Pressure Cook function to high and the time to 15 minutes. Allow the pressure to naturally release.

3.

Strain the broth + discard the solids. Return the broth to the pressure cooker pot.

4.

Soak rice noodles in cool water for 30 minutes while pressure releases from the IP. Finish cooking one serving at time by submerging noodles + strainer in simmering water for a couple minutes.

5.

Add chicken meat to broth to warm.  Ladle soup over individual bowls of noodles. Customize by adding all the garnishes you like!
