 INGREDIENTS

Cut skin-on potatoes into 1-inch rounds and boil.

Drain, then cut coins from the potato rounds.

2.

Discard the skins and whip the remaining potato scraps with milk + olive oil.

3.

Sauté the coins in butter + olive oil.

4.

Pipe the whipped potatoes onto the coins and garnish with chives.
