 INGREDIENTS

Preheat your oven. Place ramekins in a baking dish.

Heat cream, sugar, salt + basil to a simmer. Rest for 15 minutes off heat.

2.

Whisk egg yolks + vanilla until thick and smooth.

3.

Temper eggs with warm cream first before incorporating the remaining cream.

4.

Strain the custard to remove basil + any lumps.

5.

Pour custard into ramekins, then add hot water to the dish. Bake for 35 minutes. Cool, then refrigerate for at least 2 hours.

6.

Just before serving, top with sugar and torch to create that crispy pane of caramelized sugar.
