Air Fryer Irish Cheddar + Bacon Potato Croquettes are a delicious way to use up leftover mashed potatoes for a fun, two-bite appetizer.

 INGREDIENTS

Combine ingredients for the sour cream + chive dip, set aside.

Combine crumbled bacon, sautéed leeks + leftover mashed potatoes. Portion out using a small scoop

2.

Flatten + place a cube of Irish cheddar in the center.

3.

Wrap the potato around the cheese and roll into a ball.

4.

Set up a dredging station with flour, egg and Panko.

5.

Roll each croquette first in flour, then egg, then Panko.

6.

Air fry or oven fry until the exterior is crispy and the cheese is melty! Serve with sour cream + chive dip.
