Saturday mornings for me are all about meal planning for the week to come. Surrounded by cookbooks, foodie newsletters, my favorite cooking websites and a steaming cup of coffee, I set to work to curate a daily menu full of variety and healthy options that also fit my family’s schedules.

Do you like potato skins? I think I lived off them in college…sort of. I don’t eat them anymore, but this pizza brought it all back. You’ve got to try it and don’t leave off the jalapeño! I took a shortcut and used naan, but it worked out perfectly.

I love any dish where I can use rotisserie chicken leftovers. Some nights, you just need quick and easy! This comes together quickly but does not skimp on flavor! The kiddo loved it, too (gotta admit, I was a little surprised he did). Oh, we also added a little lime scented sour cream to our garnishes.
This is probably our 2nd go-to grilled chicken recipe (after Adobo Chicken). I’ve made it with bone-in/skin-on thighs, boneless/skin-on, boneless/skinless…it doesn’t matter! It’s so delicious in any version. PSA — if MSG is a problem for you, be sure to look for adobo and sazon blends that don’t use it, or do a quick Google search for an easy homemade version.
Who doesn’t love quesadillas?! These are packed with flavor. I made 4 and between the 3 of us, they were gone in a flash! The only thing I did differently was to chop the shrimp in smaller pieces.
I made these 3 times a week! Obsessed. A perfect whole food side dish. They are a tiny bit crispy on the outside, but really tender inside. And the seasoning blend is just delicious! Also…my kid only like potatoes in fry form, but he ate ALL of these.
My kiddo practically swoons every time I make this, but it’s been awhile! It’s quick, easy, one dish, comforting and delicious! And maybe one of the best ways to eat your veggies!
